Excelsa | India
A rare coffee species you will hardly ever come across in the Czech Republic. It comes from the Bella Bean farm in the Coorg region of India and went through sequential anaerobic processing. The coffee cherries first ferment in sealed tanks without air, in several consecutive steps, and are then dried with the fruit still on. This gives the coffee a distinctly fruity and sweet character.
In the cup: tropical fruit, ripe papaya, black cherry and a juicy acidity reminiscent of caramelised pineapple.
For those who want to taste something truly different. It shines brightest as filter coffee, where the fruity notes come through best.

- Preheat the portafilter and cup.
- Add 18 g of coffee and tamp evenly.
- Extract 40 g of espresso in 28–32 s.

- Rinse the filter with hot water and discard the water.
- Add 12 g of coffee, pour a little water over it and let it bloom for 30 s.
- Gradually pour up to 200 g of water, about 3 minutes in total.

- Place the filter with the triple-fold side towards the spout, rinse it with hot water and discard the water.
- Add 30 g of coffee, pour 60 g of water and let it bloom for 45 s.
- Pour in slow circles up to 500 g, 4–5 minutes in total.

- Let it steep for 6 minutes, then stir.
- After 8 minutes, slowly press the plunger and pour.

- Fill the basket with coffee and level it without tamping.
- Use medium heat; as soon as the coffee starts to hiss, take it off the heat.
