What espresso needs

When making espresso, water is pushed through the coffee under pressure and within a few dozen seconds pulls out sweetness and acidity in concentrated form. That is why espresso works best with coffees that have a full body, natural sweetness and lower acidity – they stay balanced even in a small cup and pair well with milk.

Coffees in this collection

Thanks to its monsoon processing, Monsooned Malabar is smooth, mellow and almost free of acidity – as espresso or cappuccino it offers butter biscuit, milk chocolate and nuts. Mudremane Estate from Chikmagalur makes a lighter, more elegant espresso with notes of black tea and flowers. Koraput brings a fruitier cup with stone fruit and dark chocolate for those who like a bolder espresso.

Brewing tips

Our coffees are roasted lighter than is usual for espresso. Start with a ratio of about 1 : 2 (for example 18 g of coffee to 36 g of drink) and a finer grind, then adjust to taste – if the espresso tastes sour, grind finer or extend the extraction; if it tastes bitter, grind coarser, shorten the extraction or pull a smaller shot. All coffees in this collection also work beautifully as filter.
