Monsooned Malabar | India
A coffee with a story that begins on the Malabar Coast. The green beans spend several weeks in warehouses open to the monsoon winds. They soak up moisture, swell and lose most of their acidity. The result is a mild, smooth, full-bodied coffee unlike anything else.
In the cup: butter biscuit, milk chocolate, nuts and a slightly woody, earthy finish.
Perfect for anyone who doesn't like acidic coffee. It works beautifully as espresso and with milk, and holds up well as filter coffee too. Personally, I recommend a Kalita/V60 or a Chemex.

- Preheat the portafilter and cup.
- Add 18 g of coffee and tamp evenly.
- Extract 40 g of espresso in 28–32 s.

- Rinse the filter with hot water and discard the water.
- Add 12 g of coffee, pour a little water over it and let it bloom for 30 s.
- Gradually pour up to 200 g of water, about 3 minutes in total.

- Place the filter with the triple-fold side towards the spout, rinse it with hot water and discard the water.
- Add 30 g of coffee, pour 60 g of water and let it bloom for 45 s.
- Pour in slow circles up to 500 g, 4–5 minutes in total.

- Let it steep for 6 minutes, then stir.
- After 8 minutes, slowly press the plunger and pour.

- Fill the bottom chamber with hot water up to the valve.
- Fill the basket with coffee and level it without tamping.
- Use medium heat; as soon as the coffee starts to hiss, take it off the heat.
- If you like, dilute the finished coffee with hot water, up to 1 : 1.
