Nagaland lies in north-east India, in the hills on the border with Myanmar. This lot was grown by smallholder farmers and went through classic washed processing: the fruit is removed, the beans are washed and then dried. The result is a clean, sweet coffee with a smooth, buttery texture.

- Preheat the portafilter and cup.
- Add 18 g of coffee and tamp evenly.
- Extract 40 g of espresso in 28–32 s.

- Add 12 g of coffee, pour a little water over it and let it bloom for 30 s.
- Gradually pour up to 200 g of water, about 3 minutes in total.

- Add 30 g of coffee, pour 60 g of water and let it bloom for 45 s.
- Pour in slow circles up to 500 g, 4–5 minutes in total.
